Alfajores

That’s alpha-whores, not alfazores, alfa-joores or any other anglicized pronunciation. These Spanish sandwich have a layer of dulce de leche in the middle and are usually sprinkled with coconut, almond or other chopped nuts.Mine were filled with desiccated coconut and flaked almonds.  Though you can make dulce de leche (milk jam/confiture de lait) yourself by boiling a can of condensed milk, buying it premade saves time and potential kitchen explosions.

The cookies have a light and soft texture due to the cornflour.

Ingredients
  • 120g cornflour
  • 95g plain flour
  • 1 tsp baking powder
  • Dash salt
  • 115g butter
  • 65g caster sugar
  • 2 egg yolks
  • 1 tbsp brandy
  • ½ tsp vanilla extract
  • 240ml dulce de leche/caramel
  • Icing sugar for dusting
Directions
  1. Cream the butter and sugar until fluffy.
  2. Add the yolks, brandy and vanilla extract.
  3. Mix the dry ingredients in a bowl, then slowly add to the egg/butter mixture until just combined.
  4. Wrap in plastic and chill overnight.
After chilling...
  1. Preheat the oven to 175C/350F, line a baking tray.
  2. Roll out the dough to 5mm - 10mm thick and cut out 5cm circles.
  3. Bake for 12-14 mins until lightly golden.
  4. Transfer to a wire rack to cool completely.
  5. Sandwich two cookies together with the dulce de leche and dust with icing sugar.

Bake for 12 mins until golden brown. They shouldn’t spread much.
