Nanaimo bars are a Canadian bar from the city of Nanaimo. They have a biscuit and walnut base, custard in the middle and chocolate on top. They’re a good ‘make-ahead’ dessert for Canada Day on July 1st and a change from the predictable maple syrup and pancakes.

Ingredients
Base
- 115g butter
- 50g caster sugar
- 25g (5 tbsp) cocoa powder
- 1 egg
- 150g digestive/graham cracker crumbs
- 75g desiccated coconut
- 50g chopped walnuts/almonds
Custard Centre
- 115g butter
- 45ml double cream
- 2 tbsp custard powder
- 200g icing sugar
Topping
- 100g dark chocolate
- 1 tsp coconut oil
Directions
Base
- Melt the butter, sugar and cocoa powder, then add the egg.
- Cook for a couple of minutes until slightly thickened.
- Remove from the heat and mix in the biscuit crumbs, coconut and your choice of walnuts or almonds.
- Press into the tin.
Custard Middle
- Beat the butter, cream and custard powder until fluffy, then add the icing sugar.
- Spread over the base and chill to set.
Chocolate Topping
- Melt the chocolate and coconut oil in the microwave.
- Spread over the cooled bars.
- Chill to set the chocolate before slicing.
